Tuaran Mee is a noodle dish unique to Sabah, originating from the town of Tuaran — about 30 minutes north of KK. What makes it distinctive is the noodle itself: a hand-rolled egg noodle that's flat, slightly thick, and has a satisfying chew that machine-made noodles can't replicate.
What Is It
The noodles are made from egg dough, rolled flat, then cut into strips. They're fried in a wok with egg (scrambled and wrapped around the noodles), vegetables (usually choy sum), and a light soy-based sauce. The egg coating gives the noodles a distinctive appearance — slightly golden and glossy.
It's a simple dish, but the texture of the handmade noodles and the wok hei (breath of the wok) make it special. The best versions have a slight char on the egg coating and noodles that are springy, not mushy.

- Morning is the best time to go — noodle shops are busiest at breakfast and lunch.
- Ask for "extra egg" if you like it richer.
