Beaufort Mee is a dark, richly flavoured fried noodle dish from the interior town of Beaufort, about 1.5 hours south of KK. It's one of those dishes that people make special trips for — and it's hard to find a proper version outside Beaufort itself.
What Is It
Thick yellow noodles are stir-fried in a dark soy-based sauce, giving them an almost black colour. The dish is cooked with high wok heat, giving it a strong smoky flavour. It's typically served with pork, vegetables, and sometimes an egg. Some versions come in a thick, gravy-like sauce; others are drier.
The distinctive dark colour and deep, caramelised flavour set it apart from standard fried noodles. The sauce — a mix of dark soy, oyster sauce, and other seasonings — is what each shop guards as its recipe.

Tips
- Beaufort is on the way to Padas River white water rafting — combine the two for a great day trip.
- The Sabah State Railway runs from KK to Beaufort (and onwards to Tenom). Take the train for the experience, eat Beaufort Mee, then come back.
- Best eaten in the morning — kopitiam hours. Most shops close by mid-afternoon.
- If you see "Beaufort Mee" in KK, it's usually an approximation. The real thing is in Beaufort.
